Moon Rabbit is a plant-based Japanese concept with has a firm commitment to the fundamentals of the cuisine SHOJIN RYORI and MACROBIOTIC.
No eggs, dairy, lactose, refined sugar, artificial ingredients or colorants are being used.
Each week at Moon Rabbit we buy our fresh organic vegetables from the local marketand use nataural ingredients as much as possible.
Mottainai or “No Waste”
Mottainai is a Japanese term conveying a sence of regret concerning waste. No waste is a very important part of the Zen Buddhistic cuisine. That’s why we never throw away the gift from Mother Earth. For example from the peel of the vegetables we make a broth, which is the base of our sauce, soup and curry.
Sustainable
To protect the world and our environment, we use only “To Go” containers that is made of recycled and biodegradable materials.
The story Moon Rabbit
Tsukino No Usagi is a old Japanese folktale about a rabbit how lives on the moon.
According to this tale, an old man who lived on the moon decided to visit Earth. He looked down to earth and saw the animals who lived in the forrest. All a while, he wondered which of the animals was the most mercifull! The monkey, the fox or the rabbit. Arriving on earth he asked the monkey, fox and the rabbit for food. The monkey and the fox brought the old man some food.
But the rabbit was unable to bring anything, instaed he build a fire and jumped in to be cooked. The old man pulled him out and ask the rabbit why he did this! The rabbit replied that he could not find suitable food and therefore decided to sacrifice himself. The old man praised the rabbit for his mercy and in gratitude the old man took the rabbit back to the moon to care for him for eternity.
